Food services and conference facilities (without accommodation)

Food services and conference facilities without accommodation, such as restaurants, canteens, commercial kitchens, cafés, and conference centres are included in the product group. Catering, take-away and fast-food restaurants can also be certified with the Nordic Swan Ecolabel.


A Nordic Swan Ecolabelled food service and conference facilities must meet strict environmental requirements and take a holistic approach to environmental work related to energy, water, food, waste, chemicals, and procurement. The company must work in a structured and dynamic way to reduce their consumption of resources and to optimize their daily operations with regard to the environment.


The requirements include:

  • Reducing their environmental footprint by serving more sustainable food. For example, by offering vegetarian food, preferably use locally produced ingredients, and by avoiding endangered fish and seafood species. Palm oil cannot be used in the fryer.
  • Serving a high proportion of organic food and drink.
  • Energy and CO2-reducing measures to limit the environmental footprint.
  • Efficient use of water.
  • Efficient recycling, to ensure material recycling and a more circular use of resources.
  • Implementing routines to prevent food waste.
  • No use of disposable items in daily serving.
  • Strict environmental requirements for disposable items for catering, take away and fast food.
  • Limiting harmful and unwanted chemicals by using ecolabelled products for general cleaning, dish washing and laundry.
  • The use of several ecolabelled products and services.
  • Training of the employees so that everyone is involved in the environmental work.

    Application fee is reduced to 750€ + VAT per additional unit in a chain*, excl. inspection visit, if applications are coordinated centrally by only one contact person.

    Renewal fee

    1,000€ + VAT incl. one inspection visit

    Renewal fee is reduced to 375€ + VAT per additional unit in a chain*, cf. above, excl. inspection visit.

    More than one inspection visit within the Nordic region**

    500€ + VAT per inspection visit

    Change of existing licence***

    For changes in existing licence:

    < 4 hours: 375€ + VAT
    < 8 hours: 750€ + VAT
    ≥ 8 hours: 1,500€ +VAT

    Annual licence fee for Denmark

    0.1% of the total turnover up till 1,800,000€ and 0.03% of the total turnover per unit.

    Minimum fee for Denmark

    1,000€ + VAT per unit per year

    Maximum fee for Denmark

    4,000€ + VAT per unit per year

    For chains with 5 or more units certified the annual licence fee for Denmark can be calculated as a fixed rate of 1,200€ + VAT per unit.

    * Chains are here defined as units with identical brands and similar concepts which certify at least 5 hotels and apply for licence collectively at national level in a coordinated way and have coordination during the validity period of the licence.

    ** Where inspection visits requires more than one day away from the office including travelling, Ecolabelling Denmark can invoice an additional fee of 1,000€ + VAT per extra day. Other extraordinary costs induced by the audit can also be invoiced the applicant.

    *** For extension or changes to a licence time used in connection with the review process will be invoiced according to the extent of the required task. We make a distinction between entirely administrative tasks, that last less than 1 hour, and all other tasks that last between 1 and 4 hours, between 4 and 8 hours, and more than 8 hours.
